Raspberry and Almonds Financiers
Because of the traditional brick-like appearance, the “Financier” is also known as the “brick cake” in the east.
The MICHEL BRU’s Financiers, with a rounder, smaller shape, has the same flavor as the traditional financiers, but easier to eat.
Financier is a traditional small French almond cake, flavored with beurre noisette.
Light and moist with a crisp, eggshell-like exterior, this traditional financier also contains egg whites, flour, and powdered sugar.
The King's Pie
The traditional French King’s Pie is now available in Taiwan with MICHEL BRU. This dessert is usually eaten on Epiphany day (06.01) but can be eaten at anytime. Ours is made with a 100% almonds cream, inside some puff pastry layers.
We also provide a small item to be found inside the cake, like the French Traditional way.
Traditional Confit Duck
Confit of Duck Legs, very slow-cooked in olive oil with thyme, bay leaves, peppers, and garlic. The Confit of Duck Legs is a specialty of the South West of France.
In the past, when there was no refrigerator, was a way of preserving ingredients in traditional French cuisine. By completely covering meat with grease and using the characteristics of fat solidifying at low temperature to isolate bacteria, Confit achieved preservation effect. It can be kept for up to six months.
This rustic dish from southwest France is considered one of the finest French dishes. When you take the legs out, the skin will be crispy and the meat will be soft.
Homemade Smoked Salmon

Our smoked salmon is bought fresh. Not frozen !
We marinate our salmon in an equal mix of sugar, salt and spices for 24/36 hours then we smoke it with cold process, for 4/6 hours.
